Research Interests

Using a targeted and untargeted metabolomics approach to solve challenges in food science, natural products, and health. This is done using cutting-edge technologies such as NMR, GCMS, and LCMS. Currently working on projects involving the detection of adulterants in olive oil, the detection of lard in edible oil mixtures for halal purposes, the metabolite changes of date fruit during the maturation process, and the exploration of bioactive compounds in medicinal and edible plants from various regions, including MENA and Indonesia.
